Is anyone else out there using Xylitol as a substitute for sugar? A cardiologist cookbook author suggested that I use it rather than a processed sugar substitute like Splenda - so I did and have never looked back! It tastes and measures exactly like sugar, but has virtually no glycemic index.

I've discovered Quinoa flour! I was able to easily substitute 1/2 cup of the all purpose flour with Quinoa flour. This added a full 8 gms protein and only 4 gms of unsaturated fat.

Sometimes you just gotta have a warm chewy cookie! The recipes for low carb and low fat oatmeal cookies are usually tasteless and soooo dry! Here's a lightened up recipe (from my light cooking "Bible" the America's Test Kitchens Cookbook.) that I was able to take it even lower - without sacrificing taste or texture.

Oatmeal cookies... comfort food for me, but the recipes for the lighter versions are usually soooo dry! Here's a lightened up recipe (from my light cooking "Bible" from America's Test Kitchens.) I was able to take it even lower - without sacrificing taste or texture.

THIS IS VERY IMPORTANT! If you're the owner of a dog, please be VERY careful not to allow them to eat anything that contains the sugar substitute xylitol. Xylitol, a low-calorie sweetener that's on the rise in popularity, can be found in many HG-friendly sugar-free products like chewing gum, preserves and syrups.

HELSINKI, Finland -- Finns, who introduced a birch-tree sweetener for gum, have found that the habit of chewing sticky lumps dates back thousands of years. Last month, students in western Finland found a piece of Stone Age birch-bark tar, believed to have been used for chewing and to fix broken arrowheads or clay dishes, archaeologists said Monday.
"Most likely the lump was used as an antique kind of chewing gum," said Sami Viljamaa, an archaeologist who led the dig near Oulu, some 380 miles north of the capital, Helsinki.

These cookies are sooooooo good! You won't believe how wonderful they taste in spite of the impressive "breakdown" numbers.
The skinny: 43 calories per cookie, 1.7 g fat (0.8 g saturated), 6 g carbs, 0.3 g fiber, 0.7 g protein
Has anyone else given them a try?
