First of all, I'm going to fess up and say that the cookies came out a bit dry and lacked a great peanut butter flavor. However that is definitely because of the peanut butter I used. I opted for an organic, all-natural peanut butter that did not bring nearly enough oil/fat or flavor to the party.

Raise your hand if you love peanut butter.
Yes, it's delicious, creamy, great on everything, or straight from the jar. But it's a well-known fact that most generic peanut butters are full of trans fat (partially hydrogenated oils), added sugars, and added salt.

Peanut butter oat bran cookies

Alright — so just recently I had a fun girl's night and I typically like to volunteer to bring the dessert when we're doing dinner potluck style. Although I definitely love my every-now-and-then indulgences, I try to stick to "healthier" versions of fav recipes for better health. A few weekends ago I volunteered to make these peanut butter oat bran cookies and they were SO delicious, girls!

FDA Issue definitive statement on Peanut Butter Salmonella - Do not eat Peanut Corporation of America (PCA)
Based on this information, and on the current state of the investigation, the FDA recommends that consumers avoid eating
products that have been recalled and discard them. Because identification of products subject to recall is continuing,
the FDA urges consumers to postpone eating commercially- prepared or manufactured peanut butter-containing products and institutionally-served peanut butter until further information becomes available about which products may be affected. Efforts to specifically identify those products are ongoing.

Recipe
3/4 c unsalted butter
3/4 c creamy peanut butter
2 c brown sugar -- packed
3 eggs
2 c unsifted all-purpose flour
1 TB baking powder
1/2 ts salt
1 c milk
1 ts vanilla
: Peanut Butter Filling -- see

: Chocolate Glaze -- see

: **PEANUT BUTTER FILLING:
1 c cream cheese -- softened
1/2 c creamy peanut butter
: **CHOCOLATE GLAZE:
1/2 c water
4 TB unsalted butter
1/2 c cocoa -- sifted
1 c powdered sugar -- unsifted
1 ts vanilla
In large mixing bowl, cream butter and peanut butter
until light and fluffy. Add brown sugar. Mix to blend.

My sister is a peanut butter/chocolate-aholic so when I made cupcakes to sell at her Kappa Kup BBQ, I decided to give this recipe a try. I got super worried half way through because the cake itself wasn't very sweet tasting and kind of blahhy. But once they are filled with the peanut butter filling and frosted with the chocolate ganache frosting (this is my new favorite recipe for chocolate icing!) they were spectacular.

My mother is a huge fan of anything that manages to mix together both chocolate and peanut butter. And why not? It's a combination that is obviously a success.

I usually try to lighten up all the recipes that I try, but so far the "Best Light Recipes" cookbook has the Peanut Butter Cookie recipe nailed down.
Chewy, peanutty - crip on the outside and chewy on the inside!
The breakdown goes from 110 cal for a regular peanut butter cookie to 90, 6g down to 3.5g fat, saturated fat goes from 2.5 to 1.5 (carb 14, prot 2)
Crisp, chewy, peanutty, yummy!
